1 serving Chicken (your mom's leftovers will do)
1 box Minute Rice (you'll need the rice AND the directions!)
1 package frozen broccoli
1 box Velveeta (you probably won't need the whole box.)
1 cup mayonnaise


Cook the chicken (if it is not already cooked. If it is already cooked, thank your mother.) Brown it, fry it, roast it, bake it, whatever. I usually throw it in a pan with a little cooking oil and cook it until the juices run clear. Now, make the rice following the directions on the box. If there are directions for making only one serving, use those. If not, I hope you like rice. Dump the (cooked!) chicken into the pot with the rice and stir vigorously. Clean the rice off the wall! Now take the partially thawed broccoli out of the package. (I say partially thawed because the majority of you will have taken it out and left it sitting on the kitchen counter while you did the rest of this recipe.) Put that in with the rice and chicken. Make sure you have turned the heat to LOW so the rice doesn't burn. Unless you like burned rice. Hey, I'm not here to judge you, man. Cut off chunks of Velveeta and stir them into the mix with the cup of mayonnaise. It will all melt together in one big, sticky, gooey mess. (And you thought cooking wasn't fun!) The meal is done when the broccoli is completely thawed and the cheese is melted. Yummy in your tummy. Just make sure you clean up your mess. Your mother didn't go through 36 hours of labor just to have you come into the world and mess up her kitchen, you know.


Thrifty Cake


1 teaspoon baking soda
1 cup sugar
2 tablespoons cocoa
1 1/2 cups flour
1/4 teaspoon salt
1 tablespoon vinegar
1 tablespoon vanilla
1 tablespoon cooking oil 1 cup water

Mix the baking soda, sugar, cocoa, flour and salt together. Sift the mix into an 8-inch-by-8-inch cake pan.
Make 3 holes in the mix, and pour the vinegar, vanilla and cooking oil into the holes- separately.
Pour the water over the whole mixture, then mix until lumps are out.
Bake at 30 degrees for 30 to 35 minutes, or until toothpick comes out clean.


Amish Poor Man's Steak


1 pound ground beef
1 cup milk
1 cup cracker crumbs
1/4 teaspoon pepper
1 teaspoon salt
1 small onion, chopped
1 can mushroom soup
1 can of water or milk

Mix ground beef, milk, cracker crumbs, pepper and salt. Shape into a narrow loaf.
Refrigerate for at least 8 hours, or overnight.
Cut the loaf into slices and fry in a skillet on both sides until brown.
Put browned slices in a baking dish.
Mix the mushroom soup with water or milk, and spread or pour over each piece.
Bake at 325 degrees for 1 hour.


Vinegar Pie


1/2 cup margarine melted and cooled
4 eggs slightly beaten
1/4 cup vinegar
1 1/3 cup sugar
3 to 4 tablespoons flour
1 tablespoon vanilla
One 9-inch pie shell

Preheat the oven to 325 degrees.
Mix margarine, eggs, vinegar, sugar, flour and vanilla in a bowl until well blended.
Pour into pie shell.
Bake pie for about 1 hour. Check it a few minutes before the hour. The filling should be light brown when it's done.
Allow the pie to cool before cutting it into slices. Serve cold or warmed in a microwave.


Hard Times Cake


1/2 cup butter
2 cups sugar
1 cup sour cream
3 cups flour
3 eggs
1/2 tablespoon baking soda

Mix ingredients together. Pour into 2 layer pans and bake at 350 degrees for 35 minutes.
When cool, spread with jelly or frosting.


Meatless Loaf


1 cup rice, cooked
1 cup peanuts, crushed
1 cup cottage cheese
1 egg
1 teaspoon oil
1 teaspoon salt

Combine all ingredients.
Bake in a loaf pan in 350 degree oven for 30 minutes or until loaf is set.


Second time Around Sandwiches


1/4 cup chopped onion
1/2 cup water
1/2 teaspoon salt
1/4 cup sugar
1/4 teaspoon pepper
3 tablespoons vinegar
1 teaspoon Worcestershire sauce
1/2 cup ketchup
3/4 cup water
Leftover roast meat, sliced

Simmer onion in 1/2 cup water with 1/2 tablespoon salt. Add sugar, pepper, vinegar, Worcestershire sauce, ketchup and 3/4 cup water.
Add meat and heat through.
Serve on buns.
Number of servings depend on the amount of leftover sliced meat.


Tightwad Leftover Soup


1 beef soup bone or leftover meat cut into small pieces
6 to 8 cups water or tomato juice
4 cups leftover vegetables
2 cups tomatoes (fresh or canned)
1/2 cup rice or pasta

Bring water or juice to a boil. Add soup bone or leftover meat and vegetables (add fresh or canned vegetables if you do not have enough leftovers). Add rice or pasta and salt,pepper and garlic.
Reduce heat to a simmer.
If using soup bone, remove the meat from the bone when it gets tender.
The meat should easily pull away from the bone. Cut the meat into small pieces and return to pot.
Continue simmering until the meat and potatoes are tender.


Amish Old Time Flat Cakes


2 cups sour milk or buttermilk
1 cup sour cream
3 teaspoons baking soda
2 eggs
1 teaspoon cinnamon
Enough flour to make a soft dough
Cinnamon
Sugar

Mix all ingredients except cinnamon and sugar.
Drop mixture by tablespoon into hot oil (350 degrees).
When lightly browned, remove, then roll in cinnamon and sugar.



Easy Chicken Soup

1 can chunck chicken
2 cans of chicken broth
1 can corn
1 can greenbeans
1 can blackeyed peas
1 can mushrooms
1 small onion chopped
5 new potatos cut in fourths
2 tbs. parsley
1 tbs. Butter
Salt and pepper

Put all ingredients in a crock pot and cover with water. If you put this in in the morning and set the crock pot on low it will be ready that evening.


Lentil Burgers


Serving Size : 8 [Found 7-27-99 Added: 9-16-02]

1 cup dried lentils
2 1/2 cups water
1/4 cup ketchup
1/4 teaspoon garlic powder
1 small onion -- chopped
1 cup quick-cooking oats -- uncooked
1/4 cup Egg Beaters® 99% egg substitute
1/2 teaspoon salt
1 tablespoon whole wheat flour
2 tablespoons vegetable oil

8 hamburger buns toppings of your choice Combine dried lentils and water in a saucepan; bring to a boil over med-hi heat. Cover, reduce heat, and simmer 30 mins. Cook, uncovered, 10-15 more mins . until water is absorbed and lentils are tender. Drain, if necessary.
Stir in ketchup, garlic powder, and next 4 ingredients. Shape into 8 pattie s, sprinkle with flour, and refrigerate 1 hour.
Pour 1 tbsp. of oil in skillet and fry 4 patties over med-hi heat 1-2 minutes on each side until golden. Drain on paper towels. Repeat prodedure for next 2 patties. Serve on hamburger buns with your choice of toppings. Good with A-1 Sauce.

NOTES : Cooked lentil patties may be frozen in an airtight container. Bake thawed patties at 350 for 12-15 mins. or until thoroughly heated.


Apple Burgers

Makes 4 servings [Found: 7-7-99 Added:9-16-02]

1 cup minced onion
2 tart apples (such as Granny Smith), grated
8 slices stale or toasted sandwich bread
1 large green bell pepper, seeded ands chopped
1 tablespoon minced fresh ginger
2 cups cooked white or brown rice
6 tablespoons rolled oats, ground in blender or food processor
1/2 teaspoon salt, or more, to taste
Fresh ground black pepper, to taste
1 tablespoon canola or corn oil, or more, as needed

Put onion in large bowl.
Squeeze grated apples lighty to remove excess juice, then add them to bowl.
Chop bread fine, or break into pieces and whirl it into crumbs in food processor.
Add bread crumbs, bell pepper, ginger, cooked rice and half the ground oats to bowl and mix well. Season with salt and pepper.
Form 4 patties, about 1 1/2 inches thick. Place large skillet over medium heat and add oil. Coat patties with remaining ground oats, then cook for 2 to 3 minutes per side or until they brown slightly.
Add a little more oil to pan if you need to cook a second batch.
